Recipes from the Shire

At El Bolsón, gourmet proposals set the typical style of Patagonian cuisine. Here we present an excellent choice to enjoy a good table in two very special venues in the Andean shire.

When visiting El Bolsón, tourists always have a pleasant surprise. Not only because they can find very good new things, but also because there is a constant renovation of its traditional proposals. Therefore, here we present two gastronomical icons: a brand-new restaurant with Mediterranean atmosphere and a long-time classic.

Tsunami 70

Chosen by the residents who fill the tables almost every night, Tsunami70 has already become one of the most popular restaurants in El Bolsón.

The cozy atmosphere of this small resto takes visitors away to the Iberian region even if they are in the mountain range shire. It bears the unmistakable mark of “el gallego” Juan in the kitchen, a Spaniard who learnt his trade from his mother first and touring around the seven seas later. After opening a restaurant in Tenerife and another one in Lanzarotte, Juan and Ayelén resolved to settle down at El Bolsón with what they define as "Spanish cuisine with products from this land”.

The menu reflects the features of gastronomy from Northern Spain and varied cosmopolitan influences. It rescues antique recipes with a touch of modern trends. Trout, octopus, seafood and sea fish accompanied with sauces, sautéed dishes and traditional paellas stand out in the menu, which also includes specialties with rabbit and lamb. The regional touch of Patagonian wines, such as those made by Bodega del Fin del Mundo, as well as wines from Esteco, San Rafael and Trapiche, completes this excellent gourmet alternative.

Jauja

A representative par excellence of the gastronomical proposal of El Bolsón, especially as regards ice-cream, Jauja offers a classical cuisine with a touch from modern times.
Camilo Mazzini is in charge of this traditional family business which outstands due to its varied menu with well-presented dishes, made with a neat selection of local ingredients.

The rose hip soup, tenderloin with pine mushrooms, venison and lamb are faithful expressions of the identity of Patagonian cuisine. In addition to these options, the famous regional snacks and pasta specialties are accompanied with good wines from southern wineries.

However, not only is Jauja a restaurant, but it is also “the” Patagonian ice-cream shop. Made with first-quality ingredients, without any kind of flavoring or coloring substances, the ice-cream made by Jauja is completely organic. As far as innovation is concerned, every season, Jauja introduces new flavors such as beer, peanut butter, tequila and coriander, raspberry and wine, carrot, ristretto with cream or mate cocido with three spoonfuls of sugar. Thus, a list of 70 flavors is completed.

No wonder the ice-cream yard at Jauja is always full of people. There are those who search for new flavors as well as those who cannot resist good chocolate and dulce de leche. If there is a definition for the ice-cream made by Jauja, it is that they are simply irresistible.
